For The Love of Chocolate Chocolate…thank the heavens for it!
Mississippi Mud Cake 1 cup margarine 4 eggs 2 cups sugar 1 1/2 cups plain flour 1/4 teaspoon salt 1/2 cup cocoa 1 teaspoon vanilla extract 1 cup pecans, chopped 10 1/2 ounces miniature marshmallows Preheat oven to 350 degrees. Melt margarine in 9X13 inch pan; cool. eat eggs and add sugar. Sift flour, salt and cocoa together. Add to egg mixture. Add melted margarine, vanilla and nuts. Pour into pan that margarine was melted in. Bake 35 minutes. Place miniature marshmallows on top. Return to oven for 5 minutes or until melted. Spread with following icing. Icing: 16 ounces confectioners‘ sugar sifted 1/2 cup margarine, melted 1/2 cup evaporated milk 1/3 cup cocoa Beat until smooth. Spread on top of hot cake. Don’t let the name fool you. This is a delicious cake. This is from one of my mother’s old cookbooks. The page is worn and covered with spills and stains because we used this recipe so often as children.
One of my favorite movies and books is called Chocolat. The book is different from the movie so you can read it and see the movie and not be disappointed. I like this clip from the movie because there is so much chocolate being stirred. The music is also fun. Chocolat |
